Kotthu Roti

Kotthu Roti

Home made spice mix to cook a new family favourite dish

You hear this being made in Sri Lanka before you see or smell it cooking! They use huge cleaver type instruments to bash up the roti and vegetables in a musical manner. Many restaurants and street food vendors serve a variety of this dish. Even adding cheese, any kind of meat and veg. My husband could not get enough of it, and had it most days!

Any leftover curry can be used in this, my favourite is the Spicy Chicken Curry, I always make more so we can have this the next day. Roti bread is best with this recipe but tortilla wraps are a really good substitute and works well. Our favourite vegetables to add are shredded leek, grated carrot, shredded cabbage and peas. Let me know what combinations you try.
